Thaw Time Calculator
Frozen food in hand and dinner plans in mind? Set the food and the weight below and get two honest thaw times, one for the fridge and one for cold water.
1. Choose your food
2. Set the weight
Weight set to 10 lb
3. Your thaw times
Thaw times for 10 lb of turkey
In the fridge
about 2 and a half days
The safest way. Put the food on a plate on the lowest shelf and let the cold do the work.
In cold water
about 5 hours
Change the water about 9 times while it thaws.
Microwave thawing time depends on your model and its power, so no fixed time is given here. Cook food thawed in the microwave right away. All times assume a fridge at 40°F or below and a freezer at 0°F.
How These Times Are Worked Out
Thaw time grows with weight. A small pack of fish can thaw in a few hours, while a whole turkey can take days. For each food, the calculator uses a set rate per pound: one rate for slow fridge thawing and one, much faster, rate for cold water.
The fridge rate counts the hours the food needs at 40°F or below for the cold to reach the center. The cold water rate counts the time fully under cold tap water, with the water changed every 30 minutes so it stays cold from start to finish.
Shape matters too. A flat pack thaws faster than a thick round joint of the same weight. Treat each time as a plan, not a promise. Start a little early, and check the food feels soft all the way through before cooking.
Three Safe Ways to Thaw
USDA guidance gives three safe ways to thaw food. Pick the way that fits your time, and never thaw food on the kitchen counter, where the outside warms up long before the center softens.
In the Fridge
The fridge is the safest and easiest way. Put the food on a plate or in a dish on the lowest shelf, so no drip can fall on other food. It thaws slowly and evenly, and it can wait in the fridge for a short time before you cook it.
Plan ahead, because big items take days. A whole turkey needs about a day for every 4 pounds, so a 20 pound bird needs about 5 days in the fridge.
In Cold Water
Put the food in a bag that does not leak and sink the bag in cold tap water. Change the water every 30 minutes so it stays cold all the way through. Small packs can thaw in an hour or less, while big birds still take many hours.
Cook the food right after a cold water thaw. It has sat at cool, not fridge cold, temperatures, so it should not go back to wait raw in the fridge.
In the Microwave
Use the defrost setting and follow the guide for your model, because power changes a lot from one microwave to the next. Stop often to separate pieces and turn the food, so the edges do not start to cook while the center is still hard.
Cook microwave thawed food right away. Some parts may have grown warm, and cooking at once keeps the food safe.

Food Safety Rules That Always Apply
- Counter thawing: Never thaw meat, poultry or fish on the counter. The outside warms up fast while the center is still frozen, and germs grow in the warm part.
- Fridge temperature: Keep the fridge at 40°F or below and the freezer at 0°F. A cheap fridge thermometer takes the guesswork out.
- Raw juices: Thaw on a plate or tray and keep raw meat away from ready to eat food. Wash hands, boards and counters after they touch raw meat or its juices.
- Cooking after thawing: Cook food thawed in cold water or in the microwave right away. Food thawed in the fridge can wait for the short times given in the next part.
How Long Thawed Food Keeps in the Fridge
Once food is thawed, the clock starts. Ground meat, turkey and chicken keep for 1 to 2 days in the fridge before cooking. Fish and seafood also keep for 1 to 2 days, so cook them first when you have a mix.
Beef and pork roasts, steaks and chops keep longer: 3 to 5 days in the fridge. If any thawed food smells off or feels slimy, throw it out at once. Do not taste it to check.
You can freeze food again if it thawed in the fridge and is still inside these day counts. Texture may drop a little, so refrozen meat works best in soups, sauces and cooked dishes.
Thaw times also matter after freezing. For one common example, see how cooked chicken handles freezing and thawing in our can you freeze cooked chicken guide.
Frequently Asked Questions
Can I thaw meat on the counter overnight?
No. The outer part of the food sits at warm room temperature for hours while the center is still frozen, and that warm zone is where germs grow fast. If meat sat out for more than 2 hours, throw it out and thaw the next pack in the fridge or in cold water.
How do I know when a whole turkey is fully thawed?
Feel the breast: it should give a little when you press it, with no hard icy core in the middle. The legs and wings should move freely, and you should feel no ice crystals inside the cavity. If it still feels partly frozen, give it one more day in the fridge rather than rushing it.
Can I put thawed meat back in the freezer?
Yes, if the food thawed in the fridge and is still within its 1 to 5 day window. Food thawed in cold water or in the microwave should be cooked first, then it can go back in the freezer as a cooked dish.
Can I cook beef or chicken straight from frozen?
Yes, cooking from frozen is safe for roasts, steaks, chicken pieces and ground meat patties. Plan on about one and a half times the normal cooking time, and use a food thermometer: poultry is done at 165°F, ground meat at 160°F, and beef steaks at 145°F with a short rest.
Why is my food still icy in the middle after the chart time?
Thickness is the usual reason. A thick, round pack thaws far slower than a flat one of the same weight, and a very full fridge also slows the cold air down. Move the food to cold water for the last part of the thaw, and start earlier next time.
What can I do if I forgot to thaw anything for dinner?
Thin cuts like chicken pieces, fish and ground meat patties thaw fast in cold water, often in about an hour. You can also use the microwave defrost setting on small packs, or cook thin cuts from frozen and add extra time. Then put the next meal in the fridge tonight, and future you is sorted.
